Restaurant Hubert, Sydney CBD

I have been dying to try Hubert ever since it opened but couldn’t quite find the right occasion for it. In the end, it was the perfect backdrop for a girls’ catch up evening. Despite being an underground venue, Hubert never felt stuffy or anything less than classy, warm and fun. With dim lighting, candles, a wooden interior and some live music, if you are looking to impress a date, this would have be the venue.

Unfortunately with the dim lighting and my fear of being the type of annoying dining companion who food-blocks their table from eating in order to get a perfect camera shot, my photos from that evening definitely undersell Hubert.

The dish of the night for me was definitely the dessert – the custard apple souffle with green apple sorbet. That souffle was divine. And so airy and warm. I don’t think I’ve ever had a custard apple flavoured dessert and I was a bit hesitant about how it would turn out but it was great – whilst the custard apple was quite a mild flavour running through the souffle, it was definitely present.

My second and third favourite dishes were the Bavette Steak and the kimchi gratin. The steak was so juicy, tender and well seasoned. The steak melted in my mouth almost as fast as the Cafe de Paris butter on top. The kimchi gratin was rich, but an innovative dish which combined the spicy kimchi with sweet onion and cheese – just superb!

The most notable entree dish (I seem to be writing this review in reverse from dessert to main to now entrees) was the escargot in XO sauce. I’ve had escargot in the typical garlic butter before but never in XO sauce and I hate to admit that it was a nice combination.

Overall, our other starters (the baguette, the beef tartare, the seasonable vegetables and seafood with garlic aioli) were pretty good but not dishes that I would be dying to eat again. That said, I would go back just to have some of the other desserts – our table was sitting in awe, watching the other desserts go past wishing we had more room to fit them in as well. In particular, the vacherin with its meringue exterior looked superb!
