Sushi Bay is located on the ground floor outside Westfield Parramatta in a cool circular store just beneath one of the escalators. The great news is the design allows for a fairly decent length sushi train (aka more variety!).
I’ll keep this post fairly brief and summarise my experience at Sushi Bay by saying that for sushi trains in Western Sydney, it is very fresh and the quality and variety is pretty high and comparable to the sushi trains in Sydney CBD.
A couple of notable mentions:
- The best kingfish sashimi I have ever had at a sushi train. The meat is sweet and so refreshing:

- The roe: most other sushi trains only have the red roe, but Sushi Bay also have the black roe (see above on kingfish photo). The red roe is also super fresh and although I’m not a huge roe-lover, I do appreciate that the roe is slightly salty and almost pops in your mouth

- Solid points for my favourite sushi train dish – the seared scallop nigiri. Plump scallops with a smoky sear
